Once rice is cooked, mix the remaining ingredients. Serve hot or cold. Enjoy! Organic Nut and Berry Brown Rice 4 Servings 1 organic eggplant sliced in ¼ inch thick ½ cup organic sun-dried tomato pesto (see recipe below) Evenly spread pesto on both sides of the eggplant slices. Place on a parchment lined baking sheet. Bake at 350 degrees for 25 minutes. Broil for an additional 5 minutes and enjoy! Organic Sun-Dried Tomato Pesto Blend all ingredients in food processor or chopped until smooth. Organic Sun-Dried Tomato Eggplant 1 lb. wild caught scallops ¼ cup fresh organic basil pesto (see recipe below) Gently toss scallops with pesto until evenly distributed. Bake at 350 degrees for 20 minutes. Broil for an additional 5 minutes or until lightly browned on the edges. Serve and enjoy! Fresh Organic Basil Pesto Blend in food processor or chopper until smooth.
