From Our Café Avocado Salad V GF SF DF NF Prep Time: 20 min. 4 Organic Avocados ½ bunch Organic Scallions ½ bunch Organic Cilantro 1 Organic Tomato 2 Tbsp Organic Lemon or Lime Juice Pinch of Himalayan Salt, to taste Pinch of Cayenne Pepper, to taste Peel avocados and cut into cubes, placing in medium bowl. Finely chop the scallions and cilantro and cut the tomato into small cubes. Sprinkle the lemon juice on top of the avocado and mix together. Add the scallions, cilantro, tomato, Himalayan salt and cayenne pepper. Mix well. Flour-less Chocolate GF NF Prep Time: 15 min. Cook Time: 1 hour 4 6oz bars of Semisweet Chocolate 3 Tbsp Unsalted Butter ½ cup Sugar 4 ounces Yogurt 1 Tbsp Organic Vanilla Extract 2 Tbsp Organic Corn Starch 6 Egg Yolks Preheat oven to 350 ○F and line a baking tray with parchment paper. Melt the chocolate and butter separately until they are both soft and creamy. Mix the egg yolks and the sugar in a medium bowl, whisk until fluffy. Add the butter, yogurt, vanilla and corn starch. Mix well. Add the chocolate, mix well. Spread the mixture onto the parchment paper and bake for 25 minutes or until done. Portobelo Stacks GF V SF DF NF Cook Time: 35 min. 4 Organic Portobelo Mushrooms ½ cup Hummus ¼ cup Organic Red Quinoa, cooked ¼ cup Organic Corn, toasted ¼ cup Organic Edamame, toasted ¼ cup Organic Bell Pepper, finely chopped ¼ cup Organic Red Onion, finely chopped ¼ cup Organic Celery, finely chopped 3 Tbsp Organic Rosemary, fresh finely chopped 1 Tbsp Citrus Juice 1 Tbsp Braggs Liquid Aminos 1 Tbsp Organic Safflower Oil Dash of Himalayan Salt 3 cloves Organic Garlic ¼ cup Balsamic Vinaigrette ¼ cup Olive Oil Preheat the oven to 350 ○F. Gently clean inside mushroom caps. Mix together rosemary, garlic, balsamic and olive oil; and rub into caps. Place the seasoned mushrooms on a tray and bake for 30 minutes. Allow them to cool for about 5-10 minutes. Mix together the remaining ingredients. Place 1 Tbsp of hummus in mushroom cap. Sprinkle quinoa and vegetable mixture on the top of the mushrooms and the sides. Enjoy!
