Page 14 | Abby's Magazine - www.AbbysMag.com Page 14 | Abby's Magazine - www.AbbysMag.com Roasted Beet Salad 2 Servings ½ pound fresh beets 1/4 red onion, sliced 3 tbsp balsamic vinegar 1 tbsp red wine vinegar 2 ounces safflower oil 1 tsp basil 1 tbsp olive oil or safflower oil Sea salt to taste Preheat the oven to 250 degrees. Set the beets on baking sheet lined with two layers of aluminum foil. Drizzle beets with olive oil. Transfer baking sheet to oven and roast until beets are fork tender – about 1 hour. Meanwhile, place sliced onion in small bowl with the rest of the ingredients. After beets are peeled and cut into wedges, add them to the bowl. Mix well and serve. Roasted Cauliflower Mash 4 Servings 1 head of cauliflower, cut into florets 2 tbsp olive oil 1 clove garlic 1 small yellow onion Sea salt to taste Place a steamer insert into a pot and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower florets, cover and steam until tender – about 10 minutes. Meanwhile, roast the garlic, olive oil and onion. Transfer the cauliflower, onion and garlic to a food processor and blend until creamy. Season with salt and black pepper to taste. Tuna Salad 6 Servings 4 cans of Tuna, drained 1 cup of Vegenaise 1/3 cup of celery chopped 3 tbsp minced red onion 1 tbsp lemon juice\ Sea salt and black pepper to taste In medium bowl, combine the tuna, Vegenaise, celery, onion and lemon juice. Mix well. Season to taste with sea salt and black pepper.
